Pancakes is one of the most satisfying dessert because its easy to make and its so soft and fluffy. But that taste often comes into odds with those who are on diet and are health conscious .So if you are looking for a healthy chocolate pancake recipe you are at the right place.

Well the amount of refined sugar that the packed pancake mix offers is just out of the world , it scares me a little that how can one consume that much sugar that too refined . So i tried to find a recipe that was healthy and can be indulged in a guilt free way.

Therefore, I explored alternatives to refined sugar and flour, opting for jaggery powder and whole grain flour instead.

Substitution Ideas and Tips for our Healthy Chocolate Pancake

Try Substituting refined sugar with cane sugar or coconut sugar because they have low glycemic index compared to refined sugar.

Try substituting refined flour with:

  • Whole wheat flour as it holds more nutrients and fiber compared to refined white flour. It may result in slightly denser pancakes, so you might want to mix it with another flour or use it in combination with all-purpose flour.
  • Oat Flour has a good amount of fiber and gives a slightly nutty flavor to pancakes. It’s gluten-free if you use certified gluten-free oats.
  • Almond Flour is rich in protein and healthy fats and can give a moist and slightly denser texture to pancakes, which can be quite delicious.

Try substituting Butter and refined vegetable oil with Coconut oil while cooking on the skillet or pan.


Cooking Tips and Tricks

Pancake consistency

  • Ensure that your pancake batter is well-mixed but not over-mixed.
  • Over-mixing can lead to tough pancakes.
  • Aim for a smooth batter with no lumps.

Preheating

  • Preheat your non-stick pan over medium heat before adding the pancake batter.
  • This ensures even cooking and prevents sticking.

Cook and Flip

  • Wait until bubbles form on the surface of the pancake and check that the edges look set before flipping.
  • Use a spatula to gently lift and flip the pancake in one fluid motion.
  • Avoid pressing down on the pancakes with the spatula, as this can deflate them.

Ingredients

  • 1+½ cup Milk
  • 1 tbsp White vinegar
  • 1+¾ cup Flour (I opt for whole wheat, oat, almond, or regular all-purpose flour, depending on what's on hand)
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • ¼ cup Cocoa Powder
  • ¼ cup Sugar Feel free to add ¾ cup of sugar for a sweeter taste, but I prefer my pancakes less sweet.
  • ¼ cup Vegetable oil or Butter your choice
  • cup Hot Water

Instructions

Prepare the buttermilk

  • Start with 1½ cups of milk in a mixing bowl.
  • Add 1 tablespoon of white vinegar and mix lightly. Allow it to sit for 5 minutes.
  • While the milk mixture rests, prepare your dry ingredients.

Prepare the dry ingredients

  • In a separate bowl, combine: 1¾ cups of your preferred flour,1 teaspoon of baking powder, 1/2 teaspoon of baking soda.
  • Add 1/4 cup of cocoa powder and 1/4 cup of your choice of sugar
  • If you prefer sweeter pancakes, use 3/4 cup of sugar instead. I opt for less sweetness, so I've added only 1/4 cup.
  • Using a spoon, gently mix all the dry ingredients until they are nicely combined.

Combine the Wet and dry Ingredients

  • Once the dry mix is ready, it’s time to bring it all together. In a large mixing bowl, combine the wet ingredients. Start with the prepared milk (you can skip the vinegar and opt for plain milk instead) Then, pour in 1/3 cup of hot water and 1/4 cup of vegetable oil or melted butter.
  • Grab your trusty spoon and begin mixing everything together. Blend thoroughly until a smooth pancake batter forms. This step is crucial for achieving fluffy, perfectly textured pancakes that will melt in your mouth with every bite
  • Following these steps ensures your pancakes turn out just right—light, airy, and deliciously golden brown.

Time to Cook

  • Heat a non-stick pan over low flame and lightly brush it with vegetable oil. Allow the pan to heat up gently. Once hot, scoop out 1/4 cup of batter and pour it onto the pan. No need to spread the batter—it will naturally form a circular shape.
  • Be patient and let the pancake cook slowly on low heat. After a couple of minutes, air bubbles will start to appear on the surface, indicating it’s time to flip the pancake. Cook the other side for another couple of minutes until both sides are golden brown.
  • Repeat this process with the remaining batter.

Serve and Enjoy

  • Once all the pancakes are ready stack them on a plate and serve hot
  • Drizzle them with maple syrup, dust them with powdered sugar, or add your favorite toppings like fresh berries, or sliced bananas, and if you feel like cheating on your diet have it with some ice cream and chocolate sauce.
